Description
Grapes are all organic, harvesting is by hand, The wine is made using the traditional method with fermentation on lees in sandstone amphoras and the secondary fermentation in the bottle. The wine spends one year on the lees in bottle before disgorging.
Tasting notes
A quite rich and luxurious style of Crémant with baking spices, baked apple and stone fruit, the Colombard adding lift and acidity, all topped off with a dash of savoury salinity. Small fine bubbles lend a creamy, mousse-like texture.
