Description
A portion of the 25-30 year old vines are situated at the base of the Saint Christophe des Bardes slope, the rest are situated on the gravel soils of Saint Sulpice. Vines are planted on old sandy soils, sandstone and gravel. Fruit is manually and machine harvested. After a cold soak pre fermentation, a 3-4 week maceration in temperature controlled tanks follows, with regular punching down. Before bottling the wine is aged for 12-15 months in French oak barrels, 30% new of which are new.
Tasting notes
Concentrated dark fruits on the nose with cigar box and autumnal leaves. Blackberry and cured meat with a vein of minerality. Full bodied with chunky but pleasing tannins and a depth that carries through to a long finish.
Food match
Excellent with Côte de Boeuf.
