Description
Filey Bay is the first single malt whisky made in, and of, Yorkshire. Why 'of Yorkshire'? Because it's created by us from field to bottle, here on the coast.
In June 2016, we ran the stills for the first time and filled our first casks. Filey Bay First Release was bottled in September 2019 and since then Filey Bay has grown and prospered.
Full term sherry cask maturation is key for this annual autumn series. Carefully selected from our warehouse, each batch comprises around 5 casks of either a single style, or a curated combination of sherry styles (around 2000 bottles), married together by our Whisky Director and Distiller and bottled at 46%.
For the third of our annual autumn Filey Bay Sherry Cask Reserve series, Whisky Director Joe married together five Fino casks from the warehouse, three which were filled with our Pot distillate, and 2 which held our lighter column distillate.
Made from palomino grapes, Fino sherry is naturally light, dry and delicate. During maturation, the heavier and oilier nature of our more traditional pot distillate really took on the spicy, ginger notes of these casks, whilst the fruitier, lighter nature of our unique column distillate let the sweet, honey flavours sing.
