Description

Lindores Abbey Distillery is located in Newburgh in Fife, Scotland. The history of the distillery dates back to the 12th century, when David Earl of Huntingdon founded the abbey. Historians speculate that the abbey's monks actively crafted aqua vitae, an early precursor to whisky, positioning Lindores Abbey as one of Scotland's pioneering sites for whisky production.

In the 16th century, during the Scottish Reformation, the dissolution of Lindores Abbey led to the loss of its distilling tradition for centuries. Then, in 2017, Drew McKenzie Smith stepped forward with a vision to resurrect this ancient craft. He officially opened Lindores Abbey Distillery, breathing new life into the age-old tradition of whisky making at Lindores Abbey. The restoration project involved extensive research into the abbey's history and the traditional methods of whisky production.

This is the second release in 'The Casks of Lindores II' series, where Lindores Abbey Distillery has been exploring three core casks of Bourbon Casks, STR Wine Barriques and Sherry Butts.

This edition sees the award-winning Single Malt spirit matured exclusively in shaved, toasted and re-charred (STR) Wine Barriques from Spain and Portugal.

 

Official Tasting Notes
Nose - Very mellow fruity jam, caramelised muscavado sugar, Scottish butter tablet notes and cinnamon touches.
Palate - Sweet plums and dates, ripe apricots with baking spices and roasted chestnuts. Notes of apple and cinnamon pie at the back with a very smooth texture and a pleasant finish.
Finish - Medium to long with spices, honey and caramel notes.
